Towards the lumen of the esophagus you'll find stratified squamous epithelium because this is an organ that is exposed to great mechanical wear. Cylindrical epithelium or single-layer squamous epithelium would not be robust enough.

Non keratinized squamous epithelium also ensures a smooth and friction-free surface so that the bolus can easily pass.
